Hi Debbie -- very interesting study! I have done a tiny bit with SL, and wanted you to know about a paper I wrote:

Julie A. Reynolds and Jennifer Ahern-Dodson, Promoting science literacy through Research Service-Learning, an emerging pedagogy with significant benefits for students, faculty, universities, and communities, Journal of College Science Teaching, vol. 39 no. 6 (2010)

Currently, you are interested in whether students learn biology content after they teach the content. One thing that could be interesting in the future is to know if students do *research* as service (instead of teaching as service), does that improve science research skills or attitudes about research. Since SL is so prominent in your school, this may be something to think about for other courses in your department.

Best of luck! -- Julie
